I am coming into this discussion a bit late, but I would like to add afew things.
1. Turn your sunvisors down. I have heard that mice like to nest between the sunvisor and the headliner, and then chew the materials.
2. I bought an extra set of tires and wheels for my Mustang for the winter and store my show tires. If there is any mishap in the house like a fire, the car can be moved out quick. Not so if up on jacks. I went overboard here, i bought another set of '68 Mustang ralley wheels and mounted new BFG radials to the tune of about $1k, but any cheap wheel and tire will do.
3. Since I rarely take my Mustang out, it sits just about all year. I fog the engine similar to what is done to boat engines. May be overkill, or even debateable, but it doesn't take long or cost much for a bit of mystery oil to pour into the carb to lube everything from the engine to the exhaust.
So it's just my 2cents
